I gotta say, I'm positive the hots comes from a powder. It's a big plastic jar they buy through the supplier (you can also get the same company's spices at CostCo), and iit's a red color. I believe it is, indeed, chili powder. DEfinitely no hot peppers.
I know this very well too because we always used to get a mix of "no hots" and "hots" and the way to tell the difference was the red power.

Here's the final answer:
Meats Chicken breast Bacon
Vegetables Onions, Green Peppers, Lettuce, Tomato
Spices Garlic Powder, Cayenne Pepper
Dairy Provolone Cheese
Gooey Things Mayonnaise
According the the menu board (new and improved, by the way), the red spices are "hot peppers", but I asked for clarification, and was shown the shaker of cayenne.
Technique: Place chicken breast, pre-cooked bacon, onions, peppers in a pile on griddle. Add garlic powder and cayenne. Leave alone for 2-3 minutes. Chop furiously and mix all of the above into a lovely pile of chicken madness goodness. Leave alone for 2-3 minutes. Top with slices of provolone. Watch it melt. Place entire mess on bun that has been toasted and topped with lettuce, tomato and mayo.
Mmmmmm.......that was good. I may have to have another one on Saturday on my way to the San Jose State game.....

It's shaped like provolone, and I think it tastes like it... in my mind, that was always one of the three key differences between the CM and the Peggy's Special (Chicken/sliced turkey breast, provolone/mozzarella, and bacon/no bacon).

I had a Madness after the Fullerton game and it tasted different...maybe it was a simple case of not enough mayo or pepper or something but it tasted a little bland. Has anyone else ever had a bad Madness?
I also had a bad gyro at Quick Pita about a month ago...it was definitely made differently than the QP of my youth. Am I alone in this? Is it just me?

You catch a bad one every now and then, even in my college glory years.
They have since then, however, changed the bread. Not a huge difference, but not quite as good.
